This is the sixth regular mailing of the USC University Club E-Newsletter
for the 2004-2005 school year.  We want to keep you informed of special
events, new menu items, seasonal specials, recipes and any news that
we think will help you get the most from your membership.

1. University Club Spring Break Schedule

To help you in planning evening dining and events, we'd like to keep you up to
date with the club's dinner schedule for the remainder of the semester.

The restaurant will be open for lunch only during spring break, March 14-18.

We will re-open for dinner on Monday, March 21 through Thursday, April 28
when we will begin our summer schedule.

2. 27th Annual ACUC Conference

The 27th annual conference of the Association of College and University Clubs
was held this past weekend in New Orleans.  I had the opportunity to meet and
talk with club managers from around the country and am happy to report that
many of the issues we experience at our club are common to many campuses.

The University Club is in a very unique position that the challenges we
currently face are related to our continued growth and increasing membership.  
They are not related to budget cut backs and decreased club usage as is
experienced at many of the state schools around the country. 

I am also happy to report that our member program “Meet 4 Lunch” received
third place honors at the annual idea fair.  I would like to acknowledge
Katherine Fincher and Allison Ude for their efforts and creativity in creating
and maintaining this and all of our member programs.

Students from the Thornton School 's conducting program take the podium in a
concert featuring American composers Aaron Copland, Samuel Barber and Walter Piston.

Enjoy dinner at the University Club and receive free tickets to this fantastic concert.

Danny Hoch brings his unique brand of performance artistry to USC. Hoch's one-man shows include "Pot Melting," "Some People" and "Jails, Hospitals, Hip-Hop." He has toured the world extensively, winning awards including 2 OBIES, an NEA Solo Theatre Fellowship, CalArts/Alpert Award In Theatre, a Tennessee Williams Fellowship and a Sundance Writers Fellowship.

5. Saint Patrick's Day

Saint Patrick's Day is Thursday, March 17 and we will be celebrating
by offering traditional Boiled Corned Beef and Cabbage on the buffet
at lunch.  This year we have added Irish soda bread and will have
some Guinness Stout available as well!

7. Reciprocal Club of the Month

Your USC University Club is a member of the Association of College and University Clubs (ACUC). This means that you enjoy reciprocal privileges at more than 100 private university clubs across the U.S.A., and around the world, within the ACUC network. March seems like a beautiful time to visit the South.  This spring, take a trip down to Aggieland and be sure to stop in and visit the Texas A&M University Faculty Club.

Boasting one of the most beautiful, panoramic views in central Texas, the Faculty Club, situated on the 11th floor of Rudder Tower at Texas A&M University, treats members and their guests to a unique dining experience.

The Faculty Club opened their doors in 1988 as a private club to offer on-campus dining opportunities for the pleasure and business needs of the A&M faculty. Since that time the membership has grown to include not only faculty, but staff, former students and affiliates.

Please call the USC University Club Business Office at 213-740-8345 to request an ACUC identification card. Before visiting a reciprocal club, please remember to telephone ahead to introduce yourself as a member of the USC University Club, confirm the club's hours, services and make reservations. Individual clubs may have restrictions in the use of their facilities or in the frequency of visits. When you call, be sure to inquire about any restrictions that may apply.

8. Recipe of the Month

Just in case the weather turns rainy and cold again...

BRAISED SHORT RIBS
For Eight

8 Pieces Short Ribs 12-14 oz. each
3/4 Cup Olive Oil
2 1/2 Cups Rich Beef stock
1 1/4 Cups Red Wine
Salt
Freshly Ground Black Pepper
2 Bay Leaves
3 Sprigs Fresh Thyme
3 Dozen Baby Carrots - peeled and blanched
3 Dozen White Pearl Onions - blanched and peeled
(Cook the vegetables just until the can be pierced with a knife.
They will finish cooking with the ribs.)

Heat oven to 300 degrees.

1) Heat the oil in a non-reactive roasting pan or pot. Salt and
pepper the ribs and add to the pot. Brown all sides of the
meat over a medium heat, approx. 5 minutes.

2) Transfer the browned ribs to a plate and discard oil. Deglaze the
pan with the red wine and reduce by 2/3. Add the beef stock, bay leaves,
thyme, and ribs, cover and place in the oven until the meat is tender,
approx. 1 ½ to 2 hours.

3) Add the blanched vegetables and continue cooking for 15 minutes.

4) To serve, arrange ribs and vegetables on warm plates and serve with
the strained cooking liquid and your favorite mashed potatoes. 

On a side note, I had a fabulous rendition of short ribs served on a bed of
porcini risotto.  I have no hesitation recommending the combination...
