1. Welcome Back!
The USC University Club extends a warm welcome back to all of our members! We hope your summer was not only stimulating, but relaxing. As fall beckons, the Club has been busy organizing a number of exciting events for you. Keep watching the weekly updates and the monthly newsletters as the semester progresses.
Fall Semester Restaurant Hours:
As most of you are aware, we resume dinner service on the first day of classes.
We will be open for dinner for the fall semester beginning Monday, August 27,
2007. Join us Monday through Thursday from 5:00 p.m. to 7:00 p.m.
Bar opens at 4:30 p.m.
Lunch, as usual, is served Monday through Friday, 11:30 a.m. to 2:00 p.m.
For lunch or dinner reservations, please call Alejandra at (213) 740-2030.
Reservations for lunch continue to be very much in demand for those who need them
and can fill up 2 to 3 weeks in advance for the noon hour. We recommend that if you
find it impossible to plan that far ahead for a lunch, consider walking in before 11:45
or make a reservation for 1:00 or later.
We do not reserve every table in the dining room for lunch as we know there are
a lot of members who prefer the ability to drop in. However, even those tables disappear
sometimes by noon. So, when you call for a reservation and are told that we have no
reservations left, you can still walk in. Your best chances of getting a table are before
11:45 if you need the noon hour or after 1:00 if you can put it off until then.
Let me know personally if you have any any experience you'd like to share on this issue
as it is something we visit regularly in order to find a system that works for the entire
membership.

New Photo Exhibition Installed – “Salute to USC Scientists”
Stephanie Helper, special programs coordinator, installed the newest photo exhibition,
“Salute to USC Scientists – Geniuses at Work” for this series in the Foyer. Are you on the
wall? Check it out. The people showcased include academic stars from both the University
Park Campus and HSC, including those working in the fields of biosciences, earth
sciences, mathematics, computer science and a range of other dynamic cutting-edge fields.
A special thanks to Claude Zachary, USC archivist, and Alison Engel, University Public
Relations, for their invaluable assistance with this project.

First Pre-Game Football Buffet on Saturday, September, 1, USC vs. Idaho
It’s hard to believe, but the first home game on the 2007 Trojan football schedule is this weekend,
Saturday, September 1, when USC will face Idaho. Kick-off is 7:15 p.m., which means
the USC University Club will open its doors at 4:15 p.m. Come on in and enjoy one of Chef
Orlando Hutcherson’s signature pre-game buffets. Vegetarian items included. The cost
is $16.95 per person for members and $21.50 for non-members.
Remember that all football game buffets are walk-Ins only. We do no take reservations for
the Saturday game day buffets.
Doors open three hours prior to each home game.

Free Thornton Concert Tickets with Dinner Reservations on Select Thursdays
Starting in September 2007, the University Club will offer free Thornton concert tickets with
dinner reservations on the third Thursday of the Month. On Thursday, September 20, 2007,
Larry Livingston will lead the Thornton Symphony in a concert with “Time for Three,” the
string trio that ranges from world music to jazz and rock. Have dinner at the Club and
collect free tickets for your entire party.

8. Reciprocal Club of the Month-
The University Club of Notre Dame
The University Club of Notre Dame is a private not-for-profit organization whose membership includes
faculty, staff, alumni and friends of the University. Founded in 1958, the elegant Club is situated on the
edge of the beautiful Notre Dame campus across from the Eck Notre Dame Visitor’s Center. There is
no better time to visit than in the fall.
If you’re lucky enough to be going to this year’s Notre Dame vs. USC game, scheduled for Saturday,
October 20, 2007, check out this beautiful spot! Lunch service is offered Monday through Friday,
11:30 a.m. to 2:00 p.m., and dinner service is offered Monday through Saturday, 5:30 p.m. to 9:00 p.m.
Bar service is available Monday through Thursday from 11:30 a.m. to 10:00 p.m., Friday from 11:30 a.m.

9. Recipe of the Month
Since so many of you requested this recipe the last time it was served at lunch, we
couldn't resist.
A note on peeling peaches. Personally, I prefer using serrated peeler for peeling peaches,
tomatoes and mangoes. It is slowly becoming one of my favorite kitchen tools and sure
beats having to blanch, chill and then peel. You can find them at most gourmet stores
or online. Here is just one of many links:

Cold Peach Soup with Mint Pesto
(Serves 6 to 8)
3 lb. Fresh peaches peeled, pitted and roughly sliced (About 10 Peaches)
1 ea. Cucumber peeled and roughly sliced
Half of a medium cantaloupe, peeled, seeded and roughly sliced
1 qt. Apple Juice
1 Tbsp. Honey
1 tsp. Cinnamon
1 tsp. Salt
Puree peaches, melon and cucumber in a blender or food processor until smooth. Strain pureed fruits
into a large bowl. Add remaining ingredients, stir and chill for at least 4 hours.
Adjust seasoning and serve in chilled bowls. Garnish with a dollop of mint pesto.
Mint Pesto
2 Bunches of Mint roughly chopped and destemed
1/4 cup Toasted Almonds*
1/4 cup Apple Juice
1 tsp. grape seed oil
1/2 tsp. salt
Put the almonds, juice, oil and salt in a food processor and pulse until pureed. Add the mint, and
process to a smooth texture.
Cover and refrigerate for at least 1 hour. Taste for salt and pepper and add if needed. Serve the pesto
or refrigerate up to 24 hours.
*To toast nuts: Place nuts in a dry sauté pan over medium heat. Toast, while shaking the pan to avoid
overheating in 1 spot. Remove from the heat after 3 to 5 minutes when the nuts have become a nice pale
golden color.
