One of the values identified in the recently drafted strategic plan for the University Club is that of responsibility. “We are committed to managing the USC University Club in a manner that is both fiscally and ethically responsible.” It is no secret that it is becoming increasingly more and more difficult to stretch a dollar as far as we could even 4 or 5 months ago. We want you to know that we take our fiscal responsibility to your club very seriously and will be employing every method necessary to keep the costs of running the club as low as possible. We have been carefully monitoring the situation for some time now and promise to do whatever it takes to continue to offer outstanding food and service at the best possible value. So that is our pledge to you as we navigate these uncertain waters - to keep the University Club an affordable dining option for our members without suffering quality and the overall dining experience.

This month’s recipe was a tough choice. The weather is finally starting to cool off, the holidays are fast approaching and the economy is in the dumps. So what better to cure the blues than a little comfort food! Here is a recipe for peanut butter cookies that is guaranteed to help brighten just about any day.
Classic Peanut Butter Cookies
½ cup butter ½ cup packed brown sugar ½ cup granulated sugar 1 cup creamy peanut butter (You can substitute crunchy if you like the pieces of nut) 1 large egg 1 tsp. pure vanilla extract ½ tsp salt ½ tsp baking soda 2 ½ cups all purpose flour Extra sugar for coating (optional) DIRECTIONS:
Optional – when cookies are just cool enough to handle, place them one by one in a bowl with some extra sugar and toss to coat well. Then transfer to rack for cooling. Be careful as the cookies are somewhat fragile – or not – you can always eat them as they break…
