5. Reciprocal Club of the Month

Chances are that the Trojans will be facing the University of Texas Longhorns for the BCS National Championship Game at the Rose Bowl on Wednesday, January 4, 2006, so we thought we'd focus our attention this month on the University of Texas at Austin’s Campus Club.

The Campus Club was founded in 1972 and features a staff with a combined 100 years of event and food service experience. The Club features a daily luncheon buffet, Monday through Friday, and has a lounge open for bar service. The Club also manages a wide array of special events through its catering office and provides university faculty and administrators with a relaxing venue in which to enjoy a meal, a meeting or conference. There are no overnight accommodations.

6. Recipe of the Month

Not quite sure what to do with that left over turkey? This is a recipe that I developed for a
restaurant I used to run in West Hollywood that is now closed. (Which, by the way, is no
reflection on the food.)

This is a a fast and easy dish if you have everything ready beforehand. You can substitute
chicken if you prefer. Either way, it's a very satisfying meal. Serve with a nice salad and
either a Sauvignon Blanc or Ironstone Obsession...

TURKEY HASH

SERVES 4

2 Cups Diced, Roasted Turkey Breast

1 Cup Cooked Basmati Rice

1/3 Cup Sliced Green Onions

1/4 Cup Grated Carrots

1/4 Cup Chicken Stock

2 Tablespoons Heavy Cream, Mixed With 2 Well Beaten Eggs

1 Tablespoon Grated Romano Cheese

1 Tablespoon olive Oil

1 Dash Tabasco Sauce

Heat the oil in a large sauté pan over medium high heat. Add the onions and cook until they begin to soften. (2-3 minutes) Add carrots and cook 1 minute more. Add turkey, rice and stock and heat thoroughly. Add cheese and Tabasco and toss well to mix. Reduce heat and add egg and cream mixture. Toss the mixture until it is well bound. Arrange the hash in mounds in the center of heated plates. Garnish with cherry tomato halves and chopped chives.
